Pork Loin with Green Papaya

The base of this dish is the same as the others my mom has made. Just with different vegetable. Still tastes delicious!
While mom cooked, my sister and I were getting the crabs fro the bucket to pull some to cook. One of them jumped up at me with both claws open π
3 lbs pork loin cut into small cubes
1 medium onion, sliced
6 cloves garlic, minced
1 large green cooking papaya, peeled, seeded and cut in small chunks
2 tomatoes, diced
3 Tablespoons patis (fish sauce)
3 Tablespoons soy sauce
1 teaspoon Bagoong Alamang, optional (sauteed fermented shrimp fry)
2 teaspoons garlic salt
Black Pepper
2 teaspoons vegetable oil
Heat vegetable oil in 5 quart sauteuse pan add garlic and onion. Cook until caramelized. Add tomato. Cook until tomatoes are soft.
Add pork and brown for about 5 minutes. Stir as needed. Add fish sauce, soy sauce, and seasonings. Cover and let cook until soft.
Add papaya on top, stir to get it mixed with the sauce. Cover and cook until papaya is nice and soft. Done!
