Pork rib soup using microwave pressure cooker
3 lbs pork ribs. Cut in sets of 2
1 onion, sliced
4 cloves garlic, crushed
1 small beef bouillon cube
2-3 cups water
Pinch red pepper flakes
2 teaspoons sea salt
2 Tablespoons Apple cider vinegar
2 small bunches bok choy cut into small chunks
1 cup grape tomatoes
Enoki Mushrooms (optional)

Place ribs in pressure cooker with bouillon cube, pepper and sea salt. Add vinegar and then water. Add enough water to cover the meat without going past the max fill line. Cover and cook 30 minutes. If you stand the meat up on its side and fit the pieces in, it works better in getting all the meat soaked and remain below the water line.

Allow to depressurize. Add onions and garlic. Push into the soup. Add tomatoes and then the bok choy on top. Cover and cook 10 minutes. Add enoki mushrooms at the very end. Done!

Cook times will vary based on microwave wattage. I use a 1000 watt microwave.
