Cooking with RJ and Mitch: Szechuan Ribs and Ahi Poke with Opihi Full Video unedited
You guys got extra cooking videos today!
RJ made a simple Szechuan Ribs using what we had in our pantry. Then Mitch came over to make some Ahi Poke with Opihi from the Big Island!
2 lbs Spareribs
1 bunch Cilantro, chopped
1 bunch Green Onions, cut into 2” pieces
6 cloves Garlic, minced
2 Bell Peppers, any color
1 Onion, sliced
3 Tablespoons Ginger, peeled
1/2 cup Oyster Sauce
2 Tablespoons Fish Sauce
2 Tablespoons Sriracha
Onion Salt & Black Pepper to taste
pinch of red pepper flakes
We used the Microwave Pressure Cooker to tenderize the ribs and flavor it well. The ribs were cut in sections of 4.
Place the ribs and add the Ginger, cilantro, and red pepper flakes. Cover with water not to exceed the fill line. Cover and cook for 20 minutes. Allow to depressurize.
Drain and reserve the stock. In a hot pan and about 2 teaspoons of oil, sear the ribs until brown and crisp. Slice each rib to seaparate after searing. Set aside.
Brown HALF of the bell peppers, onions, and garlic in the pan. Add the ribs back into the pan and add the oyster sauce, fish sauce, and sriacha sauce. Pour in the reserved stock and bring to a boil. Add the other half of the veggies after the meat and sauce comes to a boil.
Continue to boil until meat the sauce reduces. Approx 10-15 mins. Done!
Mitch's Poke
Fresh Ahi cut in chunks (approx 1 to 1.5 lbs)
1 whole sweet onion, sliced in bite sized pieces
1 Tablespoon Sesame oil
1 Tablespoon Shoyu (soy sauce, Aloha Shoyu Brand)
1-2 teaspoons Hawaiian salt
2 Tablespoons (2 bottle caps) of Wai Ehu (chili pepper water from Mitch's Wai Ehu Premium Chili Water )
Opihi, shell removed
Slice the ahi into bite sized pieces and place in mixing bowl. Shuck the opihi from its shell. You can use a small spoon or another shell to scoop the meat out. Place meat in the bowl. Add remaining ingredients.
Mix everything together until well incorporated and enjoy!
