Sliced and grilled a really nice Picanha! Kosher salt only and kept an eye on the flames for this cook! Mesa 400 from Monument Grills did an outstanding job!

• Started with a nice Picanha from Costco and sliced into steaks.
• Trimmed some fat and kept a nice ¼” layer of fat cap.
• Seasoned with kosher salt only about 2 hours in advance.
• Centered on the middle of the grill fat cap up with the 2 outside burners on high.
• Was shooting for a grill temp of 280F degrees.
• Once it got close to 80F we turned everything to high and started searing them.
• Turned the far right burner to low as a place to put the steaks when they were close to our final temps.
• Pulled the steaks when it got to 120F degrees and let it rest. The 2 smaller steaks did get to around 130F when we pulled them.
• Sliced this with the grain and enjoyed!
Summary: This turned out better than I expected and with just the salt in advance is my favorite way to cook these. The flavor was really perfect and we had a great meal!
