I first saw this simple garlic infused stove top chicken recipe by James at Aim'em and Claim'em channel and wanted to try it. But, I forgot to followup on it. Then just yesterday, I saw Mike, over at Random Acts of Cooking channel do this cook. He had also watched James cook it. So, since I already wanted to do this cook, and now had six chicken thighs in the fridg needing to be cooked, I said why not. So thanks to Mike for giving me this reminder. So, it works much better if you use skinless and boneless thighs. Of course mine were not, so I took a few minutes the night before, and removed the skin and bone. Went by the recipe Mike had on his show more description box and the chicken dish turned out just wonderful. Flavor explosion in your mouth. I didn't grow up on eating this type food, so I'm now learning to love it. Hope you enjoy it. Cooked inside right on the stove top.

Items to gather to make this: Quantities disclosed during the cook.

Package of 6 boneless/skinless chicken thighs
‘It’s Incredible’ seasoning (You can use other garlic based seasoning but the flavor profile will be different)
Canola oil
8 oz sliced mushrooms
Butter
Minced garlic
Flour
Chicken broth
Heavy whipping cream or Half and Half
Salt, pepper, garlic powder
Grated or shredded parmesan cheese
Spinach leaves
Rigatoni pasta or your favorite type pasta

Cook up about 8 to 10 ounces of rigatoni noodles. I used this because the tube noodles can get filled with the sauce and give a better taste with each bite. You can use any pasta type you want. When done, drain (keep about ½ cup of the noodle water for possible later use) and set aside.

Season 6 to 8 boneless/skinless chicken thighs with ‘It’s Incredible” seasoning (you can use your favorite seasoning but the flavor profile will likely change)

Heat about ½ inch oil in a medium/high heat skillet and cook chicken thighs on both sides. About 4 to 5 minutes each side till cooked through.

Remove chicken from the pan, reduce heat to medium, and add sliced mushrooms and sauté about half way through. Season with a little ‘It’s Incredible’. Cook a little longer if you like, depending on how well done you like your shrooms.

Remove mushrooms from skillet and wipe skillet kinda clean (OK if some of the chicken and mushrooms oil remains) .
Melt 2 TBS butter in the skillet. Add 4 cloves of minced garlic to the skillet (can go with 6 for more garlic flavor). Only need to sauté for 1 minute.

Add about 1 TBS flour to make a roux base. Incorporate flour into the garlic. DO NOT LEAVE THIS ALONE. This can burn really quick.

Add ½ cup chicken broth and stir well to mix up. Smash any lumps.

When you get to wall paper paste consistency, change heat to low add 1 cup heavy whipping cream (or half and half). Stir to get this mixed up pretty good. Add a dash of pepper, salt and garlic powder to your taste preference.

Add about 3 to 4 ounces of grated (or shredded) parmesan cheese and keep stirring to melt cheese. If it gets a little too thick, add a little more whipping cream.

Add about 1 to 2 cups of fresh spinach leaves, whatever amount you feel is right. Cook down just a little.

Stir in the sautéed mushrooms to the pan. Then add the chicken back to the pan. If there is any chicken drippings, add that to the pan too. That is all good flavor.

Let this simmer for a few minutes then add the pasta to the pan. Stir carefully because there should be a fairly full pan at this point.

Let this simmer for a couple minutes to heat the pasta through.
