Since I have the Weber expandable smoking rack (no longer offered), I thought I'd use it instead of just smoking the chicken on the grate. I used some hanging hooks I had on hand, and hung 3 quarters tiered together just as if they were a rack of ribs. Cooked/smoked about 2 hours and 10 minutes until internal meat temp was 167 degrees F. The WSM averaged around 275 degrees F. Started high over 300, but settled down as the cook went on and I closed the intake venting to about 1/4 open. No water pan was used, just direct pit cook style like a pit barrel. The season used was SPG (salt-pepper-garlic) home mix, and basting sauce was the Eastern Carolina Sauce which is vinegar based and easy to make.

Eastern NC BBQ Sauce
2 Cups Apple Cider Vinegar
1/2 Cup Water (optional)
1 Tbs Crushed Red Pepper
1 tsp Black Ground Pepper
1 tsp Kosher Salt
1 Tbs Texas Pete
2 Tbs Catsup or Tomato Sauce (optional)
1 Tbs Brown Sugar (optional)
Mix together server immediately or store in a mason jar.
