This is the first brisket I've cooked in the Weber Smokey Mountain 22.5 smoker. The others have been done in the offset stick burner. I picked up a 17.4 lb prime brisket from Costco while visiting some relatives in the Charleston area (Mt. Pleasant). I had planned to feature my newly purchased BBQ Guru in this all night cook, but it did not happen due to a problem with the Guru. I'll be communicating with the good people at BBQ Guru to get a replacement. I'll come back at a later date to showcase it on another cook in the near future. The WSM is a proven smoker and handled the cook just fine the way it is designed to do. The cook was a long 17 hours and 50 minutes. At the 6 hour mark, 4 a.m., The brisket stalled out at 163 degrees at which time I wrapped it in butcher's paper adding a little beef broth. It was 11 hrs into the cook before it began moving upward again. It continued to cook at around 240-250 for almost 7 more hours to hit 204 degrees internally. It turned out beautiful and tasted great. The point meat is something delicious to wait for. What we couldn't eat, we sealed up in a vaccum sealer and put in the freezer for a future meal. The Weber Smokey Mountain did a fine job. The water pan was used. I also used an extra large capacity charcoal ring made by my good friend Greg at THE WOODSHED SMOKE AND BBQ. Greg also sent me some pear wood which was used in the cook. Thanks good buddy.
