On our way back east we stopped in in the Red Canyons and cooked up this lazy, delicious one pot meal meal.

I will write the proper recipe here shortly but had to hit the road for awhile first.

If you don't have access or live in another country try using mushroom or veg broth with a good splash of coconut milk and some thai red curry flavor paste, or not.
