Press & Sear Lion's Mane Mushroom Marsala

Ingredients:

Lion's Mane Mushrooms, whole
300g Button Mushrooms, sliced
100g Shiitake Mushrooms, sliced
2 Scallions/green onions, diced
2 cups all-purpose flour
1 tablespoon granulated garlic
1 tablespoon granulated onion
1 tablespoon wicked chicken seasoning (or other chicken-flavored seasoning)
Butter (plant-based)
Olive oil

Instructions:
Prepare the Lion's Mane Mushrooms:
Heat a large skillet over medium-high heat and add a splash of olive oil to the pan
Press down on the mushroom steaks gently with a second pan create a searing effect, the "press and sear" method, add about ½ cup of water to help steam and shape without causing too much sear on the mushrooms. This helps condense into a form that can perform the same way chicken would.

Cook the mushrooms for about 3-4 minutes on each side, or until they are thin enough to work with.

Remove from heat and let cool to room temp.

Mix the Seasonings:

In a shallow dish, combine the all-purpose flour, granulated garlic, granulated onion, and wicked chicken seasoning. Mix well to create the seasoned flour.
Press & Sear the Mushroom Steaks:

Heat a large skillet over medium-high heat and add a generous amount of plant-based butter and a splash of olive oil to the pan.
Dredge each Lion's Mane mushroom steak in the seasoned flour, ensuring they are coated evenly on both sides.
Place the coated mushroom steaks into the hot skillet, making sure not to overcrowd the pan. Cook in batches if needed.
Pan sear on each side until gold brown then remove from pan to start the sauce

Prepare Marsala Sauce:
Heat the same pan, add butter and olive oil and add sliced mushrooms. Cook for 5-8 minutes until they shrink by half in size and form a nice golden-brown color.
Add a splash of Marsala wine and then the broth. Let the sauce simmer briefly until it thickens slightly.

Add the cooked Lions Mane fillets to the top and pop in the oven to finish.

Plate the Lion's Mane Mushroom steaks and drizzle the Marsala sauce (if using) over them.
These delicious mushroom steaks can be served as a hearty main dish alongside your favorite sides, such as mashed potatoes or sautéed vegetables.

Simple Sweet Potato Mashed Potatoes

Ingredients:

1 large sweet potato
4 medium-sized masher potatoes
2 tablespoons butter
Salt, to taste
Black pepper, to taste
Splash of plant-based milk (optional)
Instructions:

Peel and chop the potatoes into evenly sized chunks to ensure even cooking.

In a large pot, add the chopped potatoes and cover with cold water. Place the pot over medium-high heat and bring it to a boil. Cook the potatoes until they are fork-tender, usually around 15-20 minutes.

Once the potatoes are cooked, drain them well and return them to the pot.

Add the butter to the hot potatoes, allowing it to melt. Using a potato masher or a fork, mash the potatoes until smooth and creamy.

Season the mashed potatoes with salt and black pepper, adjusting the amounts according to your taste preferences.

For a creamier consistency, you can add a splash of plant-based milk, such as almond or oat milk, and continue to mash until well incorporated. This step is optional but can enhance the texture and flavor.
