Brennan and Carr in Brooklyn has been making New York's most legendary roast beef sandwich since 1938.
Tucked away at the far end of Sheepshead Bay, Brooklyn, this place is a bonafide New York culinary landmark. You walk in, a jolly bald man in a white coat mumbles your order into a microphone as old as the building, and what follows is one of the greatest sandwiches you will ever eat. Thinly sliced roast beef, American cheese, stuffed into a bun and aggressively dunked into a vat of hot beef drippings. And while it looks like a French dip, Brooklyn has been doing this their own way since long before that name existed.
In this video I am recreating the full Brennan and Carr experience at home. A low and slow top round roast cooked to a perfect medium, a fortified beef jus built the right way, and all three ways you can order it: the dingle dangle, the double dip, and the knife and fork job.
You do not have to go to Brooklyn anymore. But you should anyway.
