I came up with this recipe when my fridge broke down. I bought chicken for this recipe on the day, and no vegetables or anything else because there was no place to store any leftovers. All other ingredients came from the pantry. And it was delicious!
When I was in 2nd grade, living in Thailand, I went to my teacher's house and discovered that she did not own a fridge (teachers are not paid well in Thailand). I was surprised, but it didn't seem to bother her because that was her normal. She bought/cooked what she needed in the short term, and nothing more.
So in a strange way I'm glad the fridge died, or I wouldn't have come up with this recipe.
