Nikon Z cameras wont allow Exposure Zebras and Focus Peaking to be enabled at the same time (for movie mode). This video describes a tip/hack for doing so. Steps:

1) Disable Focus peaking in Custom Setting Menu \ d Shooting/display \ d10 Peaking highlights
2) Enable Exposure Zebras in Custom Setting Menu \ g Movie \ g6 Highlight Display
3) Re-enable Focus peaking in Custom Setting Menu \ d Shooting/display \ d10 Peaking highlights

Exposure Zebras will be available whenever you're in AF mode (AF-S/AF-C/AF-F)

Focus peaking will be available whenever you're in Manual Focus (MF) mode. Or when you temporarily go into MF mode by turning the lens focus ring to override AF-S/AF-C/AF-F mode
