New Orleans is famous for Bananas Foster, a flambé dessert prepared table side at many restaurants. Bananas Foster is a simple recipe where butter and brown sugar are melted in a hot skillet, then cinnamon and sliced banana added. The table side preparation concludes with a splash of rum poured into the skillet to create a flambé finish. The heated banana concoction is served over ice cream. But is table side flambé a good idea? I don’t think so. What do you think?
