More Than Just Chicken Broth | Day in my Kitchen  @1870s

There’s something about a good kitchen day that just sets things right. Today started with a simple goal—canning up some much-needed chicken broth. But as usual, one thing led to another. Before I could even think about broth, I had to clean up the kitchen from yesterday’s big dinner. We went all out for a Tuesday, roasted a whole chicken, mashed potatoes, carrots, and invited a group of kids over like it was Sunday supper. It was a fine meal, but the real reason for roasting that bird was that I’d run out of chicken broth, and that just wouldn’t do.

So, after dinner, I topped off the pot with water, threw in the leftover carrots, added a handful of peppercorns, rosemary, and turmeric, and let it all simmer overnight on the stove. By lunchtime, the house smelled like home, and I had a rich, golden broth ready to go into jars. I skimmed off most of the fat—better safe than sorry when it comes to getting a good seal. And since I had leftover chicken, it only made sense to whip up a batch of chicken salad for lunch.

While I was at it, I got a pot of eggs boiling, mixed up some overnight oats for the week, and made a peanut butter yogurt dip that tastes like the inside of a peanut butter pie. There’s a little trick to getting it just right, and I’ll show you how. Somewhere in the middle of all this, I wrapped up a birthday gift for my daughter, kept an eye on a storm rolling through, and thought about all the folks dealing with this wild weather.

By the time I turned off the canner, the day had turned out productive in that way I like best—three quarts of broth on the pantry shelf, lunch made, meals prepped for the week, and even a little dessert waiting for later. It’s days like these that remind me why I love working in the kitchen. Thanks for spending it with me. Hope you’re all staying safe out there.
