Back home and looking for something to fill the belly on a chilly Fall day. This is Mom's recipe for a hearty potato soup with just a few ingredients that's easy to make. Goes great with some crusty bread and bacon and cheese sprinkled over the top!
Ingredients:
12 medium red potatoes, peeled and boiled
3 Tablespoons butter
3 Tablespoons all purpose flour
3 cups whole milk
1 1/2 - 2 teaspoons kosher salt
Directions:
1. Peel and boil the potatoes. I cut them up into 1-2 inch squares before boiling. Drain and set aside. Pull out about 3 potatoes worth and set aside from the other potatoes.
2. In a large pot, melt the butter over medium heat. Add flour and stir until mixed. Do not brown this! Add 1 1/2 cups of milk and stir well until there are no lumps.
3. Add the boiled potatoes (minus the 3 potatoes you set aside) to a blender. Add the remaining 1 1/2 of milk and blend until smooth. This is going to be very thick, so you'll have to carefully used a spatula to get this blended evenly.
4. Add blended potatoes from the blender to the pot and mix well. Stir from the bottom as you heat the soup to keep the bottom from scalding. Add the reserved 3 potatoes and mix in. This gives the soup a bit of "chunkiness".
5. Serve with crusty bread and sprinkle with shredded cheese and fried, crispy bacon.
