Mom had a love for jello type desserts like this. This is a simple, not-too-sweet (believe it or not!) peach pudding. Easy to make and very tasty!
Ingredients:
1 16 oz can sliced peaches in syrup
1 14 oz can sweetened condensed milk
1 3/4 cups heavy whipping cream
Juice from one lemon
1/2 oz unflavored gelatin (use 3/4 oz if you want it stiffer)
Directions:
1. In a large bowl, pour in peaches with syrup and the sweetened condensed milk, setting aside several peach slices for garnish. Mix together well.
2. Add mixture and cream to a blender and blend for 2 minutes, or until smooth.
3. Add lemon juice and gelatin and blend another minute.
4. Pour into a dish, cover, and refrigerate overnight.
