Fake meat sucks, but fake sauce is a revelation. Sugo finto (that's Italian for “fake sauce”) proves that you can get a deeply savory, silky, ragu-like sauce by using vegetables to their full potential.

Instead of leaning on masse-produced imitation meat, we shred a whole heap of onions, carrots, celery and—crucially—portobello mushrooms and cook them down until they resemble bits of slow-cooked ground meat. Shredding ruptures the cellular walls, releasing water and sugar so you get a melded mass of flavor.

We also brown a healthy amount of tomato paste (the only tomato product in this recipe), building a foundation of deep umami. It's hearty. It's elegant. It's meaty (without any meat, real or otherwise).
