We love a tomato salad because we love a summer tomato, but they often lack the core component of a great recipe: contrast! And, if you're working with supermarket tomatoes, flavor. The Burmese tomato salad—inspired by one from Amy and Emily Chung's "The Rangoon sisters"—answers with crispiness, savoriness, umami, and full absorption of flavor.
The most critical element is chickpea flour, toasted until nutty and fragrant; like croutons in a panzanella, it absorbs the dressing (lime juice, fish sauce) so that the flavors don't seep out onto the plate. Shallots are treated two ways—fried and crisped by an ice water plunge—which adds two big flavors and textures.
Our director of education Rosie Gill recommends toasting extra chickpea flour while you're at it—it takes socca and chickpea flatbreads up a notch, too.
