Merry Christmas from Florida, where I had to garnish the plate with snow peas just so I could say I had snow here. Once again, it was a great day for beach and/or patio! The menu for the Christmas feast was pretty extensive, and included:
Appetizer: Cheddar Baked Olives

Main entree: Honey / Molasses Glazed Baked Ham
A favorite that I've done before.
Glaze:
1/2 cup Honey
1/2 cup Molasses
Splash Lemon juice
Slosh or two Worcestershire sauce
Mix ingredients in sauce pan and simmer lightly to blend.
Oven 325°F - 20 minutes / lb
Bake covered first hour, then uncover and baste with glaze every 15 minutes until done.
Twice-Baked Sweet Potatoes
Another favorite that I've done several times.

Fricassee of Brussels Sprouts with Bacon

Another great variation for this often misunderstood veggie.
1 lb Brussels Sprouts
3 slices Bacon
Slice Brussels crossways in 1/8" thick slices. Chop bacon and fry until getting crispy. Add Brussels, toss, salt and pepper to taste, then cover and allow to "sweat" over low heat for a few minutes, to desired tenderness. Drizzle lightly with olive oil and toss with a splash of lemon juice.
Maple Cornbread
My twist on another favorite from Hilah Johnson.

Instead of honey or molasses, this time I opted for maple syrup. It makes for a great flavor!
