T'was the day before Christmas, and all through the house, creatures were stirring but not a one was a mouse.
I decided to tackle the butterflying and stuffing of a pork loin ahead of time, rather than doing it all on Christmas day. It was a challenging project, and a learning experience, and I'm sure that as a n00b it took me ten times longer than a pro. But I had fun with it, and the next time, I'll *know* how. And the result was worth every bit of the effort!
