Every rice cake I've ever had tasted like cardboard, so when I found the little shop in Luang Prabang, Laos where rice cakes were being made each morning, I was intrigued by the process but not expecting to like the results. And then a sample was offered. I took a bite, and then another; it was the most delicious rice cake I'd ever had. Light, crispy, nicely toasted and absolutely delicious! I haunted the place after that and hardly a day went by that I didn't stop in for half a dozen. I've left Laos bow but I still crave those gourmet rice cakes.
