This is a really easy to make gluten-free cheese cracker or cheez it recipe. From start to finish this recipe can take you 30 minutes.

Preheat oven to 350 degrees
In food processor blend:
2 cups shredded cheddar,
1 1/2 cups gluten-free flour
1/2 cup cubed cold butter
2 tsp hot sauce (more or less if you prefer)
Blend for approx 30 seconds in the food processor ( i used my dough blade in my ninja iq)
add 2 tbsp plain greek yogurt
blend for another 30 seconds
add 1 tbsp plain greek yogurt
blend for another 30 seconds
if the mixture has not formed into a dough then add another 1 tbsp plain greek yogurt.
Form dough into a ball and place between two sheets of wax paper and roll out to 1/8 inch thick, cut into small squares with pizza cutter.
place on parchment lined baking sheets, poke each cracker with a fork, you can add salt to the top before baking
bake at 350 degrees for 12-15 mins (12 if crackers are small and 15 if crackers are large)
crackers are done when slightly browned on the edges, if you like them a little chewy, bottoms should be light brown and edges will not be browned.
