Make chives vinegar & improve your health⤵️
I'm strengthening my bones, lowering blood pressure, and improving my gut health this summer by doing this one simple thing.
Chives are antibacterial, antifungal, and antiviral plus they’re full of:
✨Beta-carotene
✨Lutein, and
✨Vitamins A, C, and K
The high vitamin K content means my body absorbs calcium better, so with just a TB of this vinegar (and some avocado oil) on my salad, I’m improving my bone density.
And allicin–a compound in chives that gives them their distinct smell and taste– helps lower blood pressure and cholesterol levels.
Vinegar aids digestion, while compounds in chives ease bloating and help support a healthy gut microbiome.
➡️To make chives vinegar:
Collect mature blossoms and place them in a jar, cover with vinegar and place a lid on the jar.
I wanted the blossoms to all stay submerged so I added my favorite fermenting spring.
Let vinegar steep in a dark spot for 2 weeks (it’ll turn a beautiful purple color).
Strain + enjoy.
