You asked for this series… I’m going to be milling all the grains in my pantry, showing you the flour, and telling you how I use each one.

Today I’m milling pea flour in my Mockmill 100.

You want to look for organic field peas (not split peas) for milling. Field peas are standard green garden peas that stay in the field until fully mature and dry. These are much higher in protein (20-25%) than wheat flour (14-16%) or split peas (5% protein).

Use pea flour to thicken soups and gravies, bind meatloaf and meatballs, or use pea flour as 10-20% of the flour in breads, flatbreads, or pancakes to up your protein in anything you’re baking.

You’ll need 160 grams of field peas to make 1 cup of pea flour (after sifting out the large pieces of the outer layer of the peas).
