This is the easiest, healthiest stir fry you will ever make, and it taste great! You can choose whatever vegetables you like best and add those in instead! I just had to keep it in line with my contest prep so I did it with my "approved vegetables". Enjoy and don't forget to subscribe!
Recipe:
Ingredients used:
1/4 C. soy sauce
1 TBSP lemon juice
1 TBSP sesame oil
1 TBSP rice vinegar
1/2 TSP. red pepper flakes
3 cloves garlic, minced
1 TBSP corn starch (I used tapioca starch in this video)
Veggies of choice
1LB chicken breast, cut into bite sized pieces
Instructions:
1. Mix soy sauce, lemon juice, sesame oil, rice vinegar, and red pepper flakes in a medium sized bowl. After chicken is cut, mix it with the marinade you've just made, and set it aside.
2.Cut up your vegetables.
3.Pull chicken out of bowl but keep the extra marinade left in the bottom of the bowl. Cook chicken in a wok or a pan. Once done, set aside.
4. Add garlic to pan and cook for about a minute. Then add in veggies. (If you are using fresh, uncooked veggies, you may have to add some water to the pan as they are cooking to allow them sufficient time to cook without the soy sauce drying up).
5. Once veggies are cooked, add in the extra marinade with the corn starch and cook until it thickens into a sauce consistency. Add chicken back in and mix together. Then serve over rice.
Enjoy!
