Yes, you can do an .ac sweep at a single frequency. It's not much of a sweep, but if you just want to know the voltage/current magnitude and phase angles at a single frequency, the single frequency sweep gives you the values you need.
LTSpice does seem to have a limitation that it can only give you voltages of nodes, you can't get the voltage difference between nodes unless you sweep more than one frequency.
The circuit analyzed here is a simple RL circuit and the example was taken from this online, open-source textbook:
