Sometimes you just need to call it as you see it. This video is a short snippet of Mrs. Wranglerstar and my girls weekend in Santa Rosa, California at the annual Heirloom Expo. I've included brief videos of a few of the wonderful speakers and vendors at this year's expo including, David Bronner, CEO of Dr. Bronner's, Katrina Blair, a wild weed eater, Alice Doyle owner of Log House Plants of Oregon and many others who are tirelessly working to increase the IQ of American eater, gardeners and policy makers. You'll get a feel for why GMO's are threatening Oregon's seed crops, what awesome vegetable varieties you need to be planting, what drinking vinegars are and why the environmental movement is also a food movement. INGREDIENTS
a can of full fat coconut milk or cream, refrigerated at least overnight*
1/4 teaspoon vanilla
a splash of maple syrup to sweeten to taste
DIRECTIONS
Remove your canned coconut milk from the refrigerator and remove the bottom of the can. Pour off the clear liquid and save it for another use. Add only the solid part of the coconut cream into a cold mixing bowl with a splash of vanilla and a dash of maple syrup. Whip on hight for a couple minutes until its smooth and fluffy. This melts, so you must work quickly. Store it int he refrigerator until ready to use.
Note: Only full fat coconut milk or coconut cream work in this recipe, lite coconut milk does not whip.
This makes a wonderful substitute for whipped cream. It does need to stay chilled as it will melt.

*Do not freeze. This causes the cream to separate and it will not whip up. Trust me on this one.
