![CAMPARI AND SALT?!—A Rogue Cocktail
This martini isn’t really a martini at all. Brilliant in its simplicity, the Campari Martini marries the immortal, jewel red bitter with that most common of additives—salt.
From Molecular Gastronomy: [Salt] increases the ionic strength of aqueous solutions, making it easier for odorant molecules to separate themselves from food. This is why unsalted soup has no flavor and why adding salt amplifies its odor, which is an important part of flavor.”
