Whether you bleed 151 or think rum is disgusting, there’s one I think deserves a place in your home bar—Probitas. Probitas (Veritas everywhere but the US) is made by Foursquare in Barbados, which, despite it’s small size, is one of the most decorated rum distilleries in the world. Inspired by Luca Gargano of La Maison and Velier and blended by Richard Seale, Probitas blends the flavors of two of my favorite rum-producing countries—Barbados and Jamaica.

For the curious, the esters pictured are Ethyl butyrate (bottom left) and Ethyl acetate. Fun Fact: Butyric acid by itself smells like vomit. Once combined with ethyl alcohol, the resulting Ethyl Butyrate smells like pineapple.
