It’s common for other spirits to be finished in boutique barrels, but why is it so uncommon for bourbon to be? As much as I love to experience what’s possible with just first fill American oak, I’d love to see some of the big boys try their hand at boutique finishing.

Thankfully 1792 has a few of these on the market already, branded as Thomas S. Moore. Today I’ll be trying bourbon finished in Cabernet Sauvignon, Port and Chardonnay barrels. Spoiler alert: I like them all, but not equally.
