I planted a second crop of corn on July 4th. Dealing with drought and insects made it a bit more challenging than spring corn, but the production was still pretty good. This gave us fresh corn for a few weeks and also allowed us to do some more canning. With food prices continuing to rise, its a good idea to grow as much food as you possibly can and then find a way to store it. So if you have some extra cash that isn't earning any interest in a bank, try putting it into canned goods, fertilizer, irrigation systems, etc. I think any amount of time and money spent on providing food for your family is a very wise investment.
