Glen begins his trip in Yorkton, Saskatchewan, dealing with high winds before flying his Cessna 172 (Foxtrot Mike Victor Uniform) on a 2.5-hour flight to Steinbach, Manitoba. The mission: a factory tour of La Cocina, a uniquely Canadian tortilla chip manufacturer.

Company Origins: Founded in 1984 by a family who lived in Mexico and brought back authentic recipes. Originally a "tortilleria" making soft corn tortillas, they pivoted to chips after the local market initially struggled to embrace soft tortillas.
Unique Production Process:
Proprietary Corn Blend: A secret mix of three varieties of corn, which provides their distinct flavor and "Play-Doh-like" texture during the dough phase.
Baking & Frying: Unlike many mass-produced chips, La Cocina chips are baked in a three-pass natural gas oven before being fried and salted.
In-House Engineering: Much of the machinery is custom-built and proprietary to maintain the specific quality and thin, "scoop" shape of the original recipe.
Scale and Growth: What started as a two-person operation in a 4,200 sq. ft. building has expanded into a 100,000 sq. ft. facility with 65 employees, shipping products nationwide across Canada and into the US.
