🔥 MEAL 1: AIR FRYER SMASH BURGER PATTY MELT
½ lb ground beef (80/20) — divided into 2 balls
2 slices rye bread or sourdough
2 slices Swiss cheese
¼ onion — sliced thin
1 tbsp butter — softened
1 tbsp yellow mustard
Salt and pepper
1. Air fry onion rings at 370°F for 5 min to soften. Remove.
2. Smash beef balls flat between parchment paper using a plate. Season both sides.
3. Air fry patties at 400°F for 5 min. Flip, add Swiss cheese, cook 4 more min.
4. Butter one side of each bread slice. Mustard on the other.
5. Build sandwich: bread, patty, onions, patty, bread (butter sides facing out).
6. Air fry assembled sandwich at 370°F for 3 min. Flip. 2 more min.

2 tbsp ranch dressing
Optional: diced celery, green onion for topping
1. Mix shredded chicken + buffalo sauce + cream cheese in a bowl.
2. Stuff each pepper half with the mixture. Pile it high. Top with cheddar.
3. Air fry at 375°F for 10-12 min until peppers are tender and cheese is bubbly.
4. Drizzle ranch on top. Garnish if you want.

12 oz salmon fillet — skin removed, cut into 1-inch cubes
1 tbsp olive oil
2 tbsp everything bagel seasoning
Pinch of salt
Dipping sauce:
3 tbsp mayo
1 tbsp sriracha
Squeeze of lemon juice
1. Cut salmon into 1-inch cubes. Pat dry. Toss with olive oil and salt.
2. Roll each cube in everything bagel seasoning on all sides.
3. Air fry at 400°F for 7-8 min. No flip needed.
4. Mix dipping sauce while salmon cooks.

¼ cup marinara sauce
½ cup shredded mozzarella
Olive oil cooking spray
1. Set up breading station: Bowl 1 = beaten egg. Bowl 2 = panko + parmesan + Italian seasoning + garlic powder.
2. Dip each strip in egg, then press into panko mixture on all sides.
3. Spray air fryer basket. Place tenders in single layer. Spray tops.
4. Air fry at 400°F for 8 min. Flip. Spray again. 4 more min.
5. Spoon marinara on top of each tender. Pile mozzarella on top.
6. Back in air fryer at 375°F for 2-3 min until cheese is melted and bubbly.

½ tsp onion powder
Salt and pepper
Garlic butter:
2 tbsp butter — melted
2 cloves garlic — minced (or 1 tsp garlic powder)
1 tbsp fresh or dried parsley
1. Cut steak and halve mushrooms. Toss together with olive oil, garlic powder, smoked paprika, onion powder, salt, and pepper.
2. Air fry at 400°F for 10-12 min, shaking basket halfway.
3. While it cooks — melt butter, mix in garlic and parsley.
4. Pull steak and mushrooms out. Pour garlic butter over everything. Toss. Serve.

A hundred years ago, Germany and America both had cheesecake. Germany built theirs on lean fresh cheese — light, tall, tangy. America built theirs on bricks of cream cheese. A Cheesecake Factory Original slice is ~830 calories with 12g of protein. This slice is ~165 with 12.5g. Same protein, one-fifth the calories — slice for slice, not sliver against slab. Nothing was substituted to get there. Thats just what Käsekuchen is.

The Filling
- 21 oz lean fresh cheese: I used 16 oz farmers cheese + 5 oz cottage cheese, blended with ¼ cup milk until completely smooth — 2 full minutes, zero curds. (All-cottage or all-farmers works too; target 21–24 oz. Germans use Magerquark — blended low-fat cottage cheese is the accepted American stand-in.)
- 4 large eggs, separated, room temperature
- ⅔ cup allulose
- 1½ tbsp real sugar
- ¼ cup + 1 tbsp cornstarch
- 2 tbsp butter, melted
- 1 tbsp vanilla extract
- Zest of 1 lemon — colored part only, never the white pith
- ¼ tsp fine salt
The Pan
- 9 springform, bottom and sides buttered well (no springform? A 9 deep cake pan with a parchment sling works — chill fully before lifting out)
Steps
1. Oven to 320°F, rack in the middle. Butter the springform. Separate the eggs — yolks in a small bowl, whites in a large clean one.
2. Blend the cheese and milk until completely smooth. Two full minutes, scrape once. Target: thick Greek yogurt texture, zero curds.
3. In a large bowl, whisk the blended cheese, yolks, allulose, sugar, cornstarch, melted butter, vanilla, lemon zest, and salt until uniform.
4. Beat the egg whites on high to medium-stiff peaks — the tip stands with a slight bend, 2–3 minutes.
5. Stir a third of the whites into the batter to loosen it. FOLD in the rest gently — cut down the middle, sweep the bottom, turn, rotate — just until no white streaks remain. This fold is why German cheesecake is tall and light.
6. Pour into the pan, smooth the top. Bake 55–65 minutes: golden top, set edges, slight uniform jiggle in the center. Top browning hard before 45 minutes? Tent loosely with foil.
7. Oven OFF, door cracked with a wooden spoon, cake stays inside 15 minutes. Then knife around the edge and cool to room temp on a rack. It will sink a little in the middle — every real Käsekuchen does. The flat perfect ones are the fakes.
8. Refrigerate at least 4 hours, ideally overnight. Release the ring, slice with a hot knife wiped between cuts. Serve cold, plain or with berries.
