Serving Size: 2
INGREDIENTS:
4 oz. thin spaghetti
1 egg
1 large red onion
2 tsp minced of garlic
3 Tbls. ricotta cheese
3 Tbls. fresh grated parmesan cheese
1 tbsp olive oil
1 ½ tsp truffle oil
a pinch of salt & pepper
1 tbsp butter
3 tbsp reserved pasta water - hot
1 tbsp fresh chopped parsley, garnish
Luster dust
INSTRUCTIONS:
1. Cook pasta in salted water according to package directions.
2. While the pasta is cooking start the sauce by dicing your red onion and mincing the garlic and sauteeing it in a pan with 1 tbsp of olive oil for 5-7 minutes. Mix the creamy sauce in a bowl: egg, ricotta, truffle tapenade, butter, (truffle) salt and pepper. Once the onion is translucent, add the sauce to the pan and simmer on low all together for 5 minutes.
3. Then drain pasta, but remember to reserve 3 tablespoons of the hot pasta water. After draining, return pasta to the pot but turn the burner to warm. While pasta is still hot add in the butter and reserved hot water, stirring until butter melts.
4. Then quickly add in the creamy sauce mixture, stirring to coat the pasta. Stir for about a minute or two. Serve warm with parsley and luster dust (optional) sprinkled on top.
