Recipe:
Candied Turkey Bacon
1/4 cup brown sugar 1/2 cup maple syrup 8 slices turkey bacon
For the cookies
1/2 pound (2 sticks) unsalted butter 1/2 cup brown sugar
2/3 cup granulated sugar
XX cream
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
11/2 teaspoons salt
2 cups crushed Special K cereal
2/3 cup crushed Peanut Butter M&M’s 1/2 cup popped and crushed popcorn
Instructions
1 Preheat the oven to 350°F. Line a baking sheet with parchment paper or foil, or use a baking rack over a baking sheet. Line another baking sheet with parchment paper.
2 Mix 1/4 cup brown sugar and the syrup in a small bowl. Dip the bacon strips into the sugar syrup. Line them on the baking sheet and bake for 8 minutes, then flip bacon to the other side and bake for 8 more. Let cool, chop into very small pieces, and set aside.
3 In the bowl of a stand mixer or in a large bowl with a hand mixer, combine the butter, 1/2 cup brown sugar, granulated sugar, and cream for about 2 minutes at medium speed. Scrape the sides of the bowl with a spatula and add the egg and vanilla extract. Continue to mix for about 5 more minutes.
4 Reduce the mixing speed to low, add the flour, baking soda, baking powder, and salt. Mix only until just combined.
5 Using a wooden spoon, mix in the Special K cereal, M&M’s, popcorn, and crumbled turkey bacon. Don’t overmix the batter.
6 Using an ice cream scoop (or about 11/2 table- spoons of cookie dough), scoop the dough onto the lined cookie sheet with at least 3 inches of space between each cookie.
7 Bake for 10 to 12 minutes, until the sides of the cookie begin to brown. (Remember, cookies continue to bake for a couple of minutes after being taken out of the oven while cooling, so don’t overbake.)
