Pumpkin Scone Recipe
Makes about 15 scones
Ingredients
2 cups flour
1/3 cup of packed brown sugar
1 ½ tsp cinnamon
½ tsp cloves
½ tsp nutmeg
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 stick cold butter, cubed
½ cup pumpkin puree
3 T milk + 1 T milk for eggwash
1 egg + 1 beaten egg for eggwash
2 tsp vanilla extract
¼ cup Cinnamon Toast Crunch, crushed
Glaze
½ cup powdered sugar
1 T milk
Directions:
1. Preheat oven to 400F
2. Whisk together flour, brown sugar, cinnamon, cloves, nutmeg, baking powder, baking soda, and salt. Set aside.
3. In a separate bowl, whisk together the pumpkin puree, 1 T of milk, 1 egg, and vanilla extract.
4. Pour wet ingredients over dry and combine with a spatula, being careful not to overwork dough
5. Roll dough out on floured work surface until 1” thick and cut out scones with circle cookie cutter. (I used a 2 ½” scallop cutter). Beat together remaining 1 T milk and egg for eggwash, and brush onto scones. Sprinkle crushed Cinnamon Toast Crunch onto scones. Bake on parchment lined baking sheet for 10-12 min.
6. For glaze, mix together powdered sugar and milk.
7. Allow scones to cool, then drizzle glaze on top. Sprinkle with additional crushed Cinnamon Toast Crunch.
