Chocolate Cupcake Recipe
Makes about 18-20 cupcakes
Ingredients
1 1/3 cups flour
¼ tsp baking soda
2 tsp baking powder
¼ tsp salt
¾ cups cocoa powder
3 T. butter, softened
1 ½ cups sugar
2 eggs, room temperature
1 tsp vanilla extract
1 cup milk
½ tsp instant espresso powder (optional)
1 cup toasted coconut to decorate
Directions:
1. Preheat oven to 350F.
2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cocoa powder. In a large bowl, cream together butter and sugar. Add eggs one at a time, beating after each addition. Mix in vanilla extract.
3. Alternate adding dry ingredients and milk until mixture comes together. Mix in instant espresso powder, and fill cupcake liners ¾ of the way full. Bake for 15 minutes, then let cupcakes cool completely before decorating.
Buttercream Recipe
1 cup (2 sticks) butter, softened
3 cups powdered sugar
2-3 T milk
1 tsp vanilla extract
Directions:
Cream together butter and sugar until light and fluffy. Add enough milk to reach desired consistency, and mix in vanilla extract.
