This is a great recipe. It's fast, easy, moist, tender and tastes like fried chicken. I hope y'all enjoy this recipe.
Potato Chip Chicken
1 1/2 lbs. boneless, skinless chicken breasts cut into 1 inch wide strips
1 1/4 cups finely crushed sour cream and onion potato chips (6 ounces)
1/4 tsp. onion powder
1/4 tsp. black pepper
1 egg
1/3 cup milk
Preheat the oven to 400 degrees. Finely crush 6 ounces of potato chips and add the onion powder and pepper. Mix thoroughly. In a separate bowl mix together the egg and milk. Dip the chicken strips in the egg mixture then roll in the potato chip mixture. Place on an ungreased baking pan and bake at 400 degrees for 10-15 minutes until firm and golden brown.
Note: this is supposed to be an appetizer served with ranch dressing or potato chip dip but it tastes like great fried chicken to us so it has replaced fried chicken around here. I hope y'all enjoy!
