How to Make Mexican Chorizo Stuffed Bell Peppers

INGREDIENTS:
3 large halved and seeded red bell peppers
1/2 pound chorizo
1 1/2 pds. ground beef
1 small finely diced onion
3/4 cup finely diced bell peppers
3-4 large minced garlic
1- 4oz can green chilies
1 cup salsa
1 cup corn
1 cup cooked white rice
salt to taste
1/4 tsp. black pepper
1 Tbsp. taco seasoning
1 1/2 tsp. oregano
1 1/2 tsp. cumin
grated cheddar cheese

In skillet on medium high add ground beef.
Cook and chop until fine and no longer pink.
Drain and set burger to the side.

In the same skillet on medium add chorizo.
Cook and chop until fine and chorizo starts to release oils.

Add diced onions and bell peppers.
Cook and stir 3-4 minutes.
Add minced garlic and green chilies with juices.
Cook and stir for one minute.

Add salsa, corn and cooked rice. Stir until incorporated.
Add spices. Cook and stir for one minute and turn off heat.

In a baking dish place halved red bell peppers. Add 1 cup water.
Cover with foil and bake 400 degree oven for 15-20 minutes.

Drain excess water from peppers.
Sprinkle grated cheese on bottom of each pepper.
Spoon in filling and tamp full.
Sprinkle with grated cheese on top.
Bake uncovered for an additional 5-10 minutes or until cheese is melted and peppers are heated through.

Serve and enjoy.
