Fight the good fight and keep your belly full while doing it! Marinette Soup from Miraculous Ladybug is delicious, VERY purple, and a great episode of a show that goes full out in showing this awesome recipe.
INGREDIENTS:
4 large purple sweet potatoes
4 medium purple carrots
1 head of cauliflower, chopped
1 white onion, chopped
3 cloves of garlic, minced
5 stalks of celery, chopped
5 tbsp olive oil
½ cup heavy cream
4 cups water
½ cup creme fraiche
1 tsp turmeric
½ tbsp smoked paprika
1 tsp black pepper
Pinch of sea salt
Purple edible flower
Edible greenery
INSTRUCTIONS:
Preheat oven to 350 degrees F. Prepare a large, greased baking sheet.
Peel and chop potatoes and carrots into small chunks, as well as cauliflower. Place them on a large, greased baking sheet, brushing them with olive oil. Add a pinch of salt and then bake for 30 minutes or so until vegetable are tender by fork.
In a skillet, sauteed the celery, onion and garlic until translucent.
Using a blender, food processor, or immersion blender, puree the vegetables mixed with the water. .
Pour the purple mixture into a large saucepan, add heavy cream, and season with smoked paprika and pepper. Cook for 5 more minutes, adjusting the season and consistency if needed.
In a small bowl, whisk the turmeric into the creme fraiche until it becomes golden in color.
Serve soup in a white bowl. Swirl a spoonful of golden creme fraiche in the middle of the bowl. Add an edible purple flower and edible green.
