INGREDIENTS:
Tart Crust Recipe or refrigerated pie crust
Strawberry Glaze:
2 ½ cups fresh strawberries, plus 3 whole strawberries
1 cup sugar
2 ½ tbsp cornstarch
2 tbsp corn syrup
¾ cup of water
2 tbsp strawberry gelatin
INSTRUCTIONS
1. Prepare Tart Crust Recipe (COOKBOOK ONLY) or prepare a ready-made pie crust from the grocery store and skip to step 2. After tart dough has cooled,. divide dough into 10-12 balls. On a floured surface, roll each ball out into a flat disk a little larger than the mini tart pan.
2. Shape carefully into each tart pan, using a paring knife to cut around the top of the pan to even it out if necessary. Place all 6 on a baking sheet and dock each mini tart with a fork. Put back into the freezer for 20 minutes before baking.
3. Preheat oven to 350 degrees F and bake for 20 minutes until golden brown. Rotate tarts halfway through baking in the oven to get a more even bake. Let cool completely.
4. Prepare the glaze by pureeing fresh strawberries in a food processor or blender.
In a saucepan over low heat, combine sugar, water, corn syrup and cornstarch.
5. Add pureed strawberries and cook to boil, stirring consistently until thickened.
6. Remove from heat and stir in strawberry gelatin.
7. Push strawberry glaze through a sieve to remove seeds and residual lumps of gelatin or cornstarch.
8. Pour into prepared mini tarts and put in refrigerator to cool for at least 2 hours.
9. Cut a strawberry in half, and place in the middle before serving.
