Perfect way to finish up the last of the corned beef, and almost a good enough excuse to do a corned beef to begin with. Quick and easy, do it for breakfast or dinner, and scale it up or down according to how many you're feeding.
Measurements are arbitrary, to your own taste. A rule of thumb is roughly equal parts of corned beef and potato. I prefer it a little heavier on the meat, and you can use more potato if you're stretching it.
