Furthering the experiment of cooking beans in the pressure cooker, this time I'm doing old fashioned Red Beans 'n' Rice. With a total cook time of 45 minutes, they turned out every bit as good as if I'd cooked them normally for 3 hours or so!
I'm impressed with what the pressure cooker does with them, and this is definitely how I'll be doing them from now on. It also gives the advantage that I'll be able to do them more often, because they're no longer an all day project!
I also ran through the assembly of the corn bread recipe I stole from Hilah Johnson years ago. It IS, in my opinion, the best cornbread recipe I've tried yet!
