9 non-organic Honeycrisp apples or your favorite apple variety
Lollipop sticks / skewers
2 cups sugar
1/3 cup light corn syrup
2/3 cup water
candy thermometer
cinnamon flavor oil
6 drops red food coloring

1. If you're using non-organic apples, remove the wax coating by bringing a large pot of water to steaming hot, and add 1 Tbsp of baking soda. Let dissolve.
2. Pull any stems and stickers off of your apples and drop them into the hot water.
Let them sit in the water for 1 minute, turning them to make sure all sides are exposed. Carefully take the apples out and set them on a towel to dry. Thoroughly dry them - this will also ensure that you will have the smoothest candy apples possible. Skewer the apples with the lollipop sticks where the stem used to be.
3. Prepare a cookie sheet with parchment paper or a non-stick spray and set aside.
4. In a medium pot, mix together the sugar, corn syrup and water over medium heat. Have your candy thermometer inserted but make sure the tip is not touching the bottom of your pan. Bring to a boil until it reaches 300 degrees. There is no need to continually stir it.
5. When it reaches the hard crack stage (302 degrees) remove from heat immediately and stir in your flavoring. We’re using cinnamon flavoring oil and vanilla extract, but you can use strawberry, cotton candy, watermelon, whatever flavoring oil you like.
6. Quickly add the red food coloring and stir to combine. Carefully dip the apples. Let the excess candy mixture drip a little and then place the apples on the cookie sheet.
7. The apples will be ready to eat within minutes. Exercise caution when biting into the hard candy.
They will keep for a few days. Don’t refrigerate them or they will lose their dry hardness.
If you want to make brightly colored opaque candy apples, you can use 1-2 Tbsp white food coloring before adding your desired color.
