This recipe could not be easier and is a family favorite. I make these all throughout the year, but especially at the Holidays. I wanted to have this video up before Christmas but that just did not happen. I ended up making a batch for my father in law and decided to film it for you all.
Buckeyes Recipe
1 cup butter, melted
1 jar (15-18 ounce jar) smooth peanut butter
4 - 5 cups powdered sugar
1 1/2 cups semi-sweet chocolate chips
1-2 tsp. coconut oil
1. Melt the butter and mix in the peanut butter until it is smooth.
2. Once smooth, add 2 cups of the powdered sugar. Mix. Add in the other 2 cups of powdered sugar and mix well. If needed use a hand or stand mixer.
3. Use a cookie scoop or a spoon and scoop out a couple tablespoons of the peanut butter mixture. Roll into a ball and place on a parchment paper lined cookie sheet. Continue until all of the peanut butter mixture is used. Freeze the tray of peanut butter balls for at least an hour.
4. Once the peanut butter balls are frozen, melt the chocolate, in 30 second intervals, in the microwave. Add coconut oil and mix.
5. Use a tooth pick or corn on the cob holder, and dip each peanut butter ball into chocolate, leaving some of the top without chocolate. Place back on the pan and continue until all of them are dipped.
6. Freeze until set and then enjoy.
