Today we are making the delicious Aebleskiver! Aebleskivers are a delicacy created by the Danish, that are like a pancake formed into a little ball. Traditionally, they would put a little slice of apple inside each ball, which is where the name Aebleskivers derived from meaning "apple slices".
Living on the central coast of California, we have a beautiful little danish town called Solvang, which is where we bought the aebleskiver pan as well as the delicious mix to create them. They are simple and absolutely delicious! Here is their website, if you would like to purchase www.solvangrestaurant.com.
Ingredients:
1 lb Aebleskiver Mix or Pancake Mix
4 Eggs
1 Pint Milk
Oil
In a mixing bowl, combine mix, eggs, and milk. Set aside for 10 - 15 minutes. Preheat Aebleskiver Mix on medium heat. Add 1 tsp of cooking oil to each cavity. Fill to level with batter. Turn a little at a time when they form a crust, using a wooden skewer or knitting needle. Keep turning until done. Serve sprinkled with powdered sugar and raspberry jam.
Yield about 30
