In this video Quartieri show us the secret to making, what many people consider the best pizza in the world, the Neapolitan.
They show us how to create the dough from scratch and top the pizza with authentic Italian ingredients like provolone and gorgonzola cheeses.
Recipe,
Dough,
2kg of 00 Flour to every 1 litre of water and 15g of fresh yeast and 50g salt.
Put all the flour on the table and create a small well in the middle
Dissolve the salt and yeast in the water and gently tip the water into the well gradually combining the flour together.
Once this is completed leave the dough for about 10 mins
You can then make these into little balls and then cover them and leave to rise for 2-3 hrs (they will double in size)

Ingredients,
Provolone and gorgonzola cheeses to taste, fresh basil leaves, olive oil, and a lemon.
Stretch out the dough.
Place cheeses and the basil leaves on top.
Pour olive oil over the pizza.
Place into a wood fired oven at 500 degrees centigrade for 60 seconds, or cook until done in a conventional oven.
Sprinkle lemon zest over the pizza before serving.
