Chocolate Mug Cake
Ingredients
¼ cup flour
¼ cup sugar
2 T unsweetened cocoa powder
1 egg
3 T milk
3 T canola oil
¼ tsp vanilla extract
Pinch of salt
Directions
1. Whisk together flour, sugar, and cocoa powder. Stir in remaining ingredients, and pour into microwave safe mug. Microwave at high power for about 2 minutes, keeping a close eye on the cake.
2. Let cool completely, and decorate with royal icing.
Royal Icing
Ingredients
2 egg whites, beaten until foamy
3 cups powdered sugar
1 – 2 T tsp water
¼ tsp cream of tartar (optional)
Directions:
Sift powdered sugar and cream of tartar into a large bowl. Mix in beaten eggs, and whip for 5 min until stiff. Add water until desired consistency is reached.
