Candy Corn Cookie Recipe
Yields about 180 (small) cookies
Ingredients:
1 cup (2 sticks) butter, softened
1 cup sugar
1 egg
½ tsp vanilla extract
Pinch of salt
3 cups flour
½ tsp baking soda
Yellow food coloring
Red or Orange food coloring
Directions:
1. Cream together butter and sugar until light and fluffy. Mix in egg, then add salt and vanilla extract.
2. Mix in flour and baking soda until just combined. Divide dough into thirds.
3. Press one third of dough into bottom of wax-paper lined 9” x 4” loaf pan.
4. Color one third of dough yellow, and the remaining third orange (yellow + red)
5. Press orange dough on top of uncolored dough and freeze for 10 min.
6. Press yellow dough on top of orange dough and refrigerate for 2 hours. Preheat oven to 350F
7. Remove dough from pan, and slice horizontally into ¼” – ½” slices. Cut each slice into 6 wedges, and place on baking sheet. Refrigerate pan for 15 minutes (optional if you’re in a hurry, but it helps the cookies keep their shape while baking), then bake for 7-10 min.
