Here's how to make hot sauce which is similar to Frank's hot sauce.
Hot Sauce
45 fresh cayenne peppers (10 oz.)
3 3/4 cups white vinegar
5 tsp. garlic, minced
2 1/2 tsp. salt
Remove stems and seeds from cayenne peppers and chop. Put all ingredients in a large saucepan and heat over medium heat until boiling. Reduce the heat slightly, but so the mixture continues to boil and cover. Simmer 20-25 minutes.
Remove the mixture from heat, carefully pour into a blender and puree until thick and smooth. Strain if you don't want bits of peels in your hot sauce. Transfer the mixture back into the saucepan and bring back to a boil.
Ladle the hot sauce into hot jars, leaving 1/4" headspace. Follow standard canning procedures and water bath process for 10 minutes.
Makes approximately 8 quarter pint jars.
